healthy nachos

my mexican husband LOVES nachos. Like more than meat! He has become a big fan of my cheese sauce (vegan) too, so why not put them together and make a complete meal?! Duh! My 20m old loved it too!

vegan cheese sauce:

1/2c nutritional/brewers yeast
1t sea salt
1/2c whole wheat flour
2t garlic powder
1/2t dried mustard powder
2t cumin
2t oregano
2c water (you can add more if it gets too thick for your preference)
2T evoo


place all dry ingredients into pot and whisk


turn burner on med heat, add water and oil, whisk until thickens to the consistency you prefer


toppings we love:

avocado
can of refried beans (we use vegetarian and fat free, heat in pan on med/low)
tomatoes
salsa
fage (as sour cream)
black olives

all on a bed of chips!! yummmm!


hubby much approved and went back for seconds!


happy dance?!… SCORE!! and she ate most of mine too <3

    What a great blog!!! I am constantly looking for vegetarian meals to fill up the weeknights so that we can spend our budget on local, grass fed meats. It is a struggle because financially it is not always possible, but it looks like you have some great recipes on here and I cannot wait to try them!!!
